Honey Cake

This is a traditional cake for the Jewish New Year (Rosh Hashanah) and it’s sweetness is to ensure a sweet year ahead. This recipe makes 2 loaves. Many years ago, I made it for my aunt and she said that it tasted just like her mother’s. How cool is that?

RECIPE:Grease and flour (I use a spray on) 2 loaf pans. Preheat oven to 350F  –  4 eggs, 1 C sugar, 3/4 C oil, 1 C honey, 1 C strong coffee (warm) 3 C flour, 1 t baking soda, 1 t nutmeg, 1 1/2 t baking powder, 1/2 t salt, 1/2 t cinnamon, 1/2 t allspice. (nuts and raisins are optional)

Beat the 4 eggs until they are light in color. Add sugar, oil, honey and strong coffee. In another bowl, sift together the flour, baking soda, baking powder, nutmeg, salt, cinnamon and allspice. Gradually beat together the dry and wet ingredients. Pour into the tins and bake for 50 to 60 minutes.

This is similar in texture to a banana nut loaf. You can top with powdered sugar. Spread some cream cheese on it for a delicious treat. Enjoy a sweet year ahead for one and all.
